You don't. You can designate a priority target via ctrl+click though.

you cant. however, you can hold ctrl and left click with your mouse at a squadron of enemy planes to focus your AA guns on that squadron of planes.

You don't. The most you can do is hold down the ctrl key and then click on the air group you want to prioritize, but even that is optional. Your crew will automatically fire the ship's AA guns. You can, of course, maneuver your ship so more of its AA guns are in a position to fire.

 

If you ever don't want your ship to fire its AA guns (sometimes a destroyer wants to avoid giving away its position), you can hit P to toggle them off (or again to turn them back on).

The other aspect is that you might want to reselect planes as they come in. Crafty CVs will send in fighters with the others to overwhelm your AA so the bombers and torps don't get much hits on them Or they will send in dive bombers first to suck up your AA so the torp planes get a free run. 

I would target the DBs first as they approach, at least the first group and then go to the TBs second. This is assuming there would be 2 DBs and 1 or 2 TBs.

TBs are way more dangerous....
