Hello, 

In the update it mentioned that there will be ships that we will encounter but can not be, does this mean there will be AI when we play PvP and they run around or will this be Player vs AI?

no, it means that supertesters, some lucky alpha testers and a very small and select number of others will be playing them...no AI ships will be seen in PvP mode.

I am just curious to see if they are much different than each other, I like the class so I don't mind there being a few of them if they have some interesting feature.
