I've been searching for hours, nothing in tutorials, nothing on YouTube, nothing in other WOWs videos.

How do I toggle back to my main deck guns.

Sometimes I want to fire Torpedoes using my left mouse button. but sometimes I want cannon fire using my left mouse button.

How do disengage my torpedoes capability and toggle back to use my cannons ?

Shhhsesh.

there's a pretty good list of "controls" at the following link, it would have been nice to have had these explanations there :)

https://wiki.wargaming.net/en/Ship:Controls

and now that I step back and digest this, clicking 1 or 2 to exit from 3 makes pretty good sense

Also keep in mind you can change your default 'control' settings via the user "Settings" options. Nice and handy to know, especially if you want to assign, oh, torpedo button to one of the mouse side buttons.

GL - and thanks for coming to the forum when seeking answers!

Press 1 for main battery HE shells, press 2 for main battery AP shells, press 3 for torpedo tubes, and press 0 to talk to a representative.

Just like the door close button in an elevator pressing 0 to get directly to a representative doesn't actually do anything.
