That'd be hard. Lots of genres to go over. So i'll just go with games that have stuck in my head for a good while. 

FPS: (Granted I haven't played many of these.)

Halo 2

Medal of Honor: Frontline

Brothers in Arms: Earned in Blood

 

RTS:

Medieval II: Total War

Age of Empires II

Sins of a Solar Empire

 

Massive Multiplayer:

World of Warships

Fantasy Earth Zero

World of Tanks

 

What would the original rainbow 6 games count as? Strategy/tactical shooters?

There's an old game called Destroyer Command that was excellent for its time (2002?) and managed really well to have a far more real time naval combat feel.  Have thought it would be nice to see something like a new gen of that game using the WOWS engine.  Could be a pay to play/purchase access to against AI and against other players that prefer such a style.  Problem is, and always has been, naval combat simulators are a niche in the gaming world.

Those last two games are my childhood and literally got me into WWII

Oh boy that's a hard one - I suppose it depends on what period, but a few personal favourites.

Came here expecting actual war games. 

Right now, I'd say the Decisive Campaigns series are the best war games available.
