  1. Love your soup thread @Chobittsu! I do a lot of cooking in the spare time I have at home. Submitted for your perusal is a favorite of ours.

    Thai Duck Noodle Soup Kuay Teaw Ped Toon

    Whole Duck breast or Chicken breasts cut into sliced pieces (2-3)

    6 garlic cloves

    1Tbspn peppercorns

    1/2 cup chopped fresh Cilantro

    1/3 cup Palm sugar

    4-5 cinnamon sticks

    10 Star Anise seeds

    1 Tbspn sliced fresh ginger or Galangal

    1 1/2 Tbspn five spice powder 

    1/2 cup soy or Tamari

    1/2 cup dark soy sauce

    Egg noodles (I use Pad Thai noodles)


    roasted garlic oil

    chopped Cilantro

    bean sprouts

    green onion

    1. Using a spice bag or cheesecloth put the cilantro,palm sugar,peppercorns,cinnamon sticks,ginger,and garlic in and tie off securely. 

    2. Bring 1 1/2 quarts water to a boil and toss in the spice bag and add the soy sauce, dark soy sauce and five spice powder along with the duck or chicken. Lower heat down to a simmer cover and cook for 2-2 1/2 hrs remove meat add salt to taste and bring back to a boil and cook the noodles.

    3. Remove noodles into individual servings 4-6 and stir with roast garlic oil to prevent sticking. Add the meat, bean sprouts and broth garnish with cilantro and onion. Grab your chopsticks and a spoon and enjoy! 


    This is a favorite here and I usually serve with pot stickers or spring rolls. Thanks and look forward to seeing you at Dseehafers fight night!
